A match made behind the meat counter, saw passionate foodies Kristy and Tom team up to launch the Butcher & The Chef - grass fed, ethical products with the emphasis on taste.

Based inside Harris Farm Markets, in Manly, this is much more than a butchers - offering deli products homemade meals and leading the way in sustainability.

More than 20 years experience in the retail meat industry and the fine food business has proved a winning combination for Kristy Barbara and Tom Kaiser - AKA The Butcher & The Chef.

The couple pulled their talents and skills to build a business that is all about high quality ingredients and grass fed, ethical meat and poultry plus an array of ever expanding deli produce and homemade goods.

They opened the Manly store in 2011 having been approached by Harris Farm
to come onboard. 

“We source all of our chicken, lamb, beef and pork based on the principle of sustainability and the health of the animal and its welfare,” says Kristy.

She believes the organic label can be misunderstood when it comes to sourcing the best meat and attention to where the animal comes from and how it is kept, should be of primary importance.

Kristy is happy when customers want to know more about where their product come from and believes the increasing interest in food origins, is a good thing - especially for their business.
“A lot of the reasons we do what we do is that we are unique in the foods that we make,” Kristy explains.

She says Tom comes from a family of chefs and restaurateurs and was an apprentice butcher when he and Kristy met.

“We always offer our customers something to serve with their food and also cooking tips are on most of our products on our website,” she adds.

Both she and Tom were delighted to win the butcher’s category in the Northern Beaches Local Business Awards and to come runners-up in the Excellence in Sustainability category at the NSW Business Awards last year.

Over the next 18 months they plan to expand their range of ready-made, nutritious meals with the introduction of a large gourmet kitchen. They are also buynig a farm and plan to offer farm stays to customers where they can help with growing the ingredients used in their dishes. Another way to connect with quality food.
