A spectacular setting means customers can enjoy the ocean breezed while sipping on their cocktail at Gio’s.

Sebastian is Gio’s resident bartender. Having entered the hospitality industry at the early age of 16 and then later moving into bartending, making cocktails comes second nature to Sebastian and he knows exactly what is required to run a successful restaurant and bar. 

Before arriving at Gio, Sebastian worked at some of Sydney’s top establishments and serviced private functions as a sought after freelance bartender. He also spearheaded the launch of a restaurant on North Queensland’s Magnetic Island and has worked in the marketing industry. 

He has worked alongside some of Australia’s best bartenders and chefs and has travelled extensively around Australia and Europe. Sebastian says his travels have played an important role in shaping his mixology style. 
He loves getting creative and has a flair for mixing, experimenting and trying new things behind the bar. To him, every great cocktail requires a touch of personality. 

Gio is a unique rooftop bar boasting some of the best views on the Northern Beaches. Channelling the laid-back lifestyle of the Northern Beaches, the bar is casual and relaxed, but with a distinctly modern twist.

Gio’s cocktail list was designed by Fabio Leite, who previously managed and worked in award winning cocktail bars including the Ivy Lounge, Hugo's Manly, Zeta Bar and Marble Bar at The Hilton, Establishment (Gin Garden) among others in Queenstown, New Zealand. It was inspired by fresh tropical flavours, and classic cocktail mixology with an Italian twist. 

This is an authentic Italian venue, where groups of friends and families can get together and have a great time over some delicious share plates and expertly-made cocktails.

Gio’s prime positioning on Freshwater’s headland sets it up with some of Sydney’s most breathtaking views and its unique mid-week and weekend entertainment offerings means that there is always something happening!
