The Q Station's Boilerhouse Restaurant and Bar is hosting a special degustation dinner for its Winter wine dinner series event. Enjoy a five course degustation dinner by Q Station’s Executive Chef James Green, matched perfectly to wines by Philip Shaw.
Damien Shaw will present a commentary on the wines chosen during the dinner. Philip Shaw wines are created in the high altitude and cool climate of Orange, NSW. They are made only from the grapes grown on Koomooloo, a 47 hectare vineyard, most of which was planted in the 1980s.
Philip Shaw says, “I think great wines should have silk, a softness, a texture – in chardonnay and pinot particularly but to some degree it should be in all wines. The tannins should be elegant and soft. It’s about finishing a wine off, not refining it, but getting it right. It’s in the making – a marriage between the vineyard and the winemaking.”
